The challenge

The decision to establish a 7-day restaurant at the 4-star Great Ocean Road Resort was a logical – and momentous – next step in the ongoing success of the business. But making it happen in a tight, six-week turnaround was always going to be a challenge.

Owner Damien Cerantonio knew that in order to be more competitive with the chain-owned resorts, and to expand the resort’s potential market, onsite food and beverage was key.

“We have a great deal to offer aside from different levels of accommodation,” Damien explains. “We have the day spa, health club, indoor pool, functions facilities and our popular trampolines, but we needed to be able to offer in-house food and beverages beyond our commercial kitchen capabilities which could only be used for corporate and functions catering.”

Damien determined that the food and beverage solution had to offer a range of price points to attract guests – internal and external – across a wider spectrum of the market. Thus, it was decided that the inclusion of a pizza menu would be an ideal way to satisfy younger travellers and families looking for a more affordable option to the a la carte selections.

How Caféideas helped

With just six weeks from the time the decision was made to the restaurant’s opening date, Damien needed to secure a supplier that could deliver furnishings and equipment with rapid turnaround.

“We looked around at half a dozen or so suppliers but what we instantly identified about Caféideas was that they are a company that’s keen to provide top level customer service. Even our initial experience with their website was simple. We found it easy to navigate and we could make a list online of all the items we wanted.”

Damien worked with Ralph Goodwin who made himself available to answer all questions while efficiently coordinating the supply of the resort’s shopping list within the tight timeframe. “Ralph always kept me in the loop,” Damien says. “He never seemed to be just after a sale but instead was interested in finding us the best solutions for our needs. Ralph saved me a lot of time and effort and provided a seamless service that made everything run smoothly.”

Caféideas partners with Silver Chef to provide up-to-the-minute, brand new restaurant equipment and finance options specifically tailored to the hospitality industry. “Rent-Try-Buy gives us twelve months of operating income that wouldn’t have been possible if we had projected our financial capabilities into the future,” Damien explains. “We’ve been able to open up a whole new revenue stream while at the same time providing a greater experience for guests and making our business more attractive to a wider audience.”

From the first day, the resort has been able to increase the dollar spend per guest by providing breakfast, lunch and dinner in the restaurant, in-room meals and catering to the day spa and other facilities. “Now our guests can enjoy quality meals of various types on-site,” Damien says, “and we no longer have to watch those precious food and beverage dollars leave the premises.”

Additionally, Damien says that running a 7-day restaurant operation has been far more cost-effective because everything is already set up and staff are rostered on over the entire week. “We are able to pass these cost savings on to our guests and customers,” he adds.

Working with Caféideas, Damien notes, made his ambitious goal achievable. “There was a great deal to organise and we were helped enormously with plenty of advice, expertise and experience from Ralph and Caféideas.” He cites working with a single supplier as one of the greatest benefits and found the entire process efficient and smooth.

From Caféideas, Great Ocean Road Resort sourced restaurant tables, bar stools, chairs and armchairs, a pizza oven, pizza ingredients fridges, under-bench fridges, under-bench glass/dishwashers, fryers, plate warmers, mixers, blenders and juicers.
